Our Chefs are from Louisiana and cook Cajun and Creole food the way it should be cooked.  It's savory & spicy, yet not too spicy.  The gumbo has that smokey good flavor that only a well browned roux can produce.  Are you the adventuresome type?  Try some fried alligator, you'll like it!  Tastes like chicken!

For those that prefer a burger, don't worry, there are hamburgers, hot dogs, nachos, cotton candy and all those other delicious things you expect at a festival.
